A simple and irresistible chicken recipe with creamy sun-dried tomato sauce that’s perfect for any occasion — even a proposal.
1. Prepare the chicken breasts
Cut the chicken breasts into two fillets, then cut those into bite-sized pieces. Pat them dry with paper towels and season with salt and pepper.
2. Fry them
Heat a pan with plenty of oil and a small cube of butter. Dredge the chicken in flour and fry until golden. Remove and set aside.
3. Make the sauce
Peel the garlic cloves, finely chop them, and sauté them in the same pan, stirring to avoid burning. Add the tomato paste, herbs, and ground cayenne. Stir and let the sauce darken.
4. Add the broth and cream
Pour in the hot chicken broth and raise the heat. When it starts to boil, lower the heat and let it simmer until the liquid reduces by half, about 6 minutes. Add the cream, stir with a spatula, and cook a few more minutes on low heat until it thickens.
5. Add the sun-dried tomatoes
Take the sun-dried tomatoes out of their jar, drain, cut into strips, and add to the pan. Sprinkle the grated Parmesan cheese and stir.
6. Add the chicken
Return the chicken pieces to the pan along with any juices released and cook a few more minutes on low heat.
7. Plate and serve
